Not only do they use different woods for different guitars, they also use different woods in one guitar. It's all about the sound and tone it produces.

My Maton Australian A80 (not the tropicalised ones sold in S'pore - the original ones from Australia) has Stika Spruce for the soundboard, Blackwood for back and sides, Queensland Maple for neck, Rosewood for fingerboard and bridge etc. The newer pick guard is now tortoiseshell - mine was just plastic.
