Running Ubuntu 9.04 successfully through Virtualbox on my MacbookPro 4,1. Windows 7 already successfully installed on my friend's Macbook through vb as well.
Next Windows XP.. it states "all service packs" so I'm going to push my luck..
The real test - go the other way round. Install OS X within Windows 7/Vista. Anybody tried that? As far as I know, it's more complex with other virtual setups. But with Virtualbox, it may be easier. Quick - somebody try it!

However, I have yet to find something to virtualize OS X. Couple of weeks ago I was frantically on the search for a modern Apple hardware virtualization app (mainly emulating the EFI bootloader), on the other hand, and that proved to be fruitless as well.
If you have spare time, Virtualization can be fun. There are OSs like Haiku that simply put a smile on your face, if you're into that sorta thing. I mean, it boots like fast as in crazy fast. But of course anything other than running Firefox on it is beyond reality (pun intended).
Now back to hacking USB2 audio devices (these things are simply not standards-compliant!) on Virtual XP SP3 =p
