I wouldn't be thinking of scales if i wanna move out of the box.

I can play some chords tone over it.

For example if the progression is E5 E5 C5 D5 or whatever it is.

I would first play a tapping of E major triad over the 1st E5 then a E minor triad over the second E5. Changing from major to minor would let the listeners feel the change.

Then at C5, i would tap out a C6, Cmaj7. Then at D5, a Dmin7 or maybe D7.

Then i would try a different voicing and tap it out again. I would concentrate mainly on the 3rd or the 7th but not on the root and the 5th. The progression is already playing that why would i play it? So i just colour it more by adding 3rd, 7th or the 9th.

Scale is not the only way to be creative. Think about chords too and their voicing. It really adds a new dimension to your playing.

because they have black and white keys, it's really much easier for them to map their mental ideas on. we have 6 strings, which kinda makes it 6 times as confusing sometimes, plus the fact that we can't always transpose on certain places (open frets, fingers not long enough)

on another thought, most guitarists i see are self-taught/informally taught, while most keyboardists come from piano background and have quite a substantial amount of formal lessons with them already.
