u mean spanish as in spanish acoustic stuff? if that is it, try earlier stuff by al di meola, or the spanish stuff by dominic miller (guitarist for sting). but i'm sure there is more out there... if it is electric but sounds spanish, i can't think of anything right now. only earlier santana stuff comes to mind... hmmmmm...

Play/strum the chords, E Maj, F Maj, G Maj, F Maj and back to E maj., 1 bar per chord, then do "fake" spanish style strumming and you've got something to start with!
If you want to do solo, then improvise over C major key using the above chord progressions!
