How do know tell if the guitar SOUND is good when trying?

Er, it applies to everything... audio interfaces, Neumann condenser microphones... I've a friend (producer) who has 3 mixing boards at home. He's the only one I know who can drool over a mixing board and tweak around with it for 30 minutes... with no audio going in at all. Find that level of GAS is way too deep for a mere mortal like me.
