Haha, honestly, you don't need a mega-high output pickup to do pinch harmonics easily. I used to have this misconception and i remember asking this similar question about 6 years ago here on soft.
The most important thing in doing pinch harmonics is first, the technique, second, the compressor in you effects chain, and third, the distortion. Distortion not so, because pinch harmonics can be done very very clearly with just a compressor on clean channels.
With the right technique and a compressor in your chain, just switch to bridge pup and pinch away. It doesn't matter whether your bridge pup is a single coil, vintage humbucker or a killer output humbucker.
While it's true different pickups are designed to reproduce certain harmonics in a unique way, doing a pinch harmonic is fundamentally in the technique. That's what i found out after seeing some people do it on a stock strat effortlessly.
