Oh forgot to add. To avoid polyphony problems in mono-trimbral instruments, one trick the manufacturers do is to sample the notes short. For a piano note, a sustain note can go on for up to 16 seconds. But manufactuers can cut that down to 3 or 4 seconds - so even if you use the sustain pedal, you will never hit 32 notes unless you have more than 10 fingers (or playing a duet)! Needless to say, shorter sampling affects the reaslism.
