Recommendations for reference-quality recording CDs

Does anybody have any recommendations for reference-quality recording CDs for each genre (classical, pop, rock, jazz, vocals, etc)?

My sound engineer friend told me in order to develop an ear for hearing mixes (so we know what to achieve during mixing and mixdown of tracks), we need to have a reference point. He did suggest one album (Elton John in one of his earlier concerts with the London Philharmonic). Anybody has other suggestions?
