I think sounding right and sounding nice is more often than not the same thing.
For example tension and resolution. Certain chords gives tension and certain chords provide resolution for certain chords. There is theory behind. That's why you have the II-V-I progression, etc. People thinks that that progression sounds nice.
I think knowing theory and applying it are two different matters. If you know it and do not apply it creatively, then you'll be always restricted by what you so call "learned". However, if you know truely understand the principles in the theory and creatively use them, there will be boundless possibilities!!
