Is it possible to have a piezo pickup thats single coil? I need one as a middle pickup.

Piezos are different from ur standard pickups, which are magnetic. piezos work by pressure, so they usually located in the bridge/saddles itself.

One more thing , a piezo pu can be installed on any guitar as long as there is a humbucker slot right?

no, as I said, piezo pickups are built into the bridge for electric guitars. For acoustics, they are mounted under the saddle. Which technical is still in the bridge. Put it under the strings without any contact like ur humbuckers and u won't get any sound. They work by pressure.
