Yup....what Lady said. Of course, with such a budget like yours, getting a medium ranged guitar (500 to 600), plus some cash for a decent amp (about 200), you can afford to splurge.
But of course, you must consider the factor of you loosing your interest and relegating such pricey investments to the storeroom.

Guitar no amp means no sound. Guitar with crap amp means crap sound. Amp is important.

Get a more experienced friend to follow you before you make your purchases. He could probably be your price check detective. You should never limit yourself to brands. go ahead and try as many guitars as possible. get the one that feels the most comfortable so that you will play it more often. To maximize your budget, do consider 2nd hand products because $800 along with an amp and other stuff might not get you good stuff (if you are still insistent on getting an Ibanez / PRS se).

Actually, its easier to hit a jackpot than it is to buy a crap amp. Amp prices are such that ampls like the Line 6 Spider IV 15 or the Marshall MG15, or the Laney LG20 are dirt cheat, I myself got my Laney LG20 for $90 new. So I don't think amps would be a big problem, cause if he's like me, and plays out and events or gigs more often, the amp at homes not as important as your guitar or pedals.
