especially the part where there is nothing to fret in between the A and G strings,do i just mute D,B and E and strum or include the D string to mute.

do i just fret the required strings and pick/aim for the three strings or do a strum with my left hand fretting and muting those that aren't needed?

the chords with no notes on the higher D string are octave chords. Just use your index finger which is fretting the lower note to mute the middle string and avoid strumming the other strings.
