When playing the electric guitar, is resting your underside of your palm on the bridge the correct way of playing?

If you mean palm-muting, that's essentially how palm muting is done. But you must make sure the strings are only slightly muffled, you'll have to experiment around on your guitar's bridge, where on the bridge to place your palm for the best palm muted tone.

For normal playing and shredding? Should it be placed on the bridge?

For shredding and playing individual notes, yes. Because muting the other strings makes your playing much clearer and cleaner.

But wont the paint on the bridge wear off? Like theres a change in colour? Due to long usage?

Like rust? Then you'll have to maintain it properly by cleaning regular, or something.
