Not sure whether to put this in software section or keyboard section since the two are so closely related nowadays..
Came across this while surfing around on the Behringer website. I saw that their new UMX61 controller comes with 50 virtual instruments, including these in the "download area":

audio editing, VST hosts, various instruments - drums, organs, pianos-, samplers, synths + VA synths.
I found one to be particularly interesting: http://www.yohng.com/
George Yohng is one of the developers working on the Vienna Symphonic Library, and he has branched out to do his own independent work, including software for Linux/UNIX. Not everything on his website is free though. I found his piano and rhodes VSTi to be quite interesting.
