Body wood does affect tone, but you can never be sure by how or how much. Pickups will definitely affect the tone in a more obvious manner, but again whether it's "significant" differs between people.
A p/j combines the sound of the P pup thump with the bridge J growl, and dual humbuckles is the sound you get when you wear 2 buckles on a belt and have them rub against each other.

Okok, dual hum
buckers are term for a pup config that's got 2 humbucking pickups, which are pups that don't hum... or at least not as loudly as single coils. They will sound different from a p/j setup, but it'll be a fruitless exercise to describe how unless you have a specific brand/model of humbucking pups you have in mind.
To give an analogy, imagine a bowl of meepok. If you use different brand/type of meepok noodles, it will taste different - but it's hard to say how or why. That's kinda like body wood.
Upgrading pups (i.e. from stock J's to aftermarket J's) is more like using different kinds of chilli. The taste change is definintely more obvious - but the overall flavour of the noodles will still taste like meepok.
Changing pups (i.e. from p/j to humbuckers) is like changing from bah chor meepok to fishball meepok
But in all things bass - the fingers do most of the talking.
